Spanakorizo, a tasty, fastin option, that can be serves as main course or as a side to your meat / fish dishes.
800 g spinach, rinsed and roughly chopped
1 large onion, finely chopped
1 large pepper (preferably yellow or red) finely chopped
3 cups of water
1 cup of carolina rice
1 tablespoon of dill, finely chopped
6 tablespoons of olive oil
salt and pepper
Fetta cheese (optional)
In a pan put the olive oil and fry the onion for about 3 minutes (medium heat). Add the pepper and cook for another 3-4 minutes and then add the spinach to the pan. Cook for another 6-8 minutes.
Add the water and let it boil for 10 minutes.
Add the rice, the dill, salt, and pepper to taste, and cook for 15 minutes, until the rice is cooked and the water is absorbed. In the case the water is absorbed and the rice is still uncooked, add hot water accordingly.
Remove from the heat and serve adding lemon juice to taste.
