On the top of the list of Cypriot cuisine is Souvlakia and for a good reason at that. It is the most popular food choice due to its delicious taste, versatility and is easy to cook or order. You can practically find a souvlaki fast food place on every corner you turn! Cypriots are very passionate of their souvlakia and no matter who you ask they will definitely tell you it’s the best food there is! Souvlakia is basically small pieces of meat cut into cubes and placed on a skewer to be cooked over a grill like a barbeque but with charcoal and then added into a pitta (Cypriot Pitta Bread) that has also been grilled on the barbeque.

There is also a kind of special version of the souvlaki which is known as a ‘Mix’. If you order a ‘MIX’ you will get a souvlaki in the pitta with cucumber, tomatoes, fresh parsley and anything else the shop usually puts BUT you also get 2 Sheftalia too (Sheftalia are seasoned minced meat wrapped in caul fat).This is why it’s called a mix; a mix of Souvlaki and Seftalia and the salad included too!
