Agrelia me ta avga (wild asparagus with eggs)

Agrelia me ta avga is a traditional delicacy usually cooked as light dinner dish in the island. It is regarded as a seasonal food since the agrelia-wild asparagus (in Greek “αγρέλια”) season begins from the end of January, giving the opportunity to many Cypriots to storm the fields and collect them. It is regarded as one of the easiest to make and costless Cypriot dish to cook as it only needs 2 bunches of 'agrelia' (wild asparagus) and some eggs to be prepared! If you have can’t have access to wild asparagus, you can always try this recipe with normal asparagus sold at your local grocery store!

You will need:

  • ½ kg of agrelia (wild asparagus) – that’s about 2 bunches
  • 4 eggs
  • 1/3 of a cup olive oil
  • Salt and pepper
  • Dried mint (optional)
  • Instructions:

    Break the agrelia with your hands into pieces of about 4cm. Only use the tender parts (that’s about 2/3 of the agrelia lengthwise). Heat the oil in a deep pan and fry the agrelia over medium heat. It should take about 8-10 minutes. Add the eggs, add salt, pepper and dried mint (optional). Stir well and cook until the egg is no longer runny. You are done! Kali orexi!
